Boarding House Chicken Salad

Someone told me about Durkee’s famous sauce.  I think it is the secret to this great salad.

1              baked chicken — deboned
1              bunch  red grape
celery — chopped
bell pepper — chopped
1                can  pineapple — tidbits, drained
1                cup  pecans or walnuts — chopped
1/2           cup  mayonnaise
1/2           cup  Durkee’s famous sauce

Serving Ideas : Serve in a hollowed out bread bowl with fruit with a tomato cut open like a flower in a sandwich with raisin bread.

*Durkee’s can be found in the mayonnaise section of Kroger’s.

Pineapple Cottage Cheese Salad “Sundae”

My four-year-old daughters love to make this salad in an assembly line.  We each get a job and it’s finished in a snap.

1.  Place a lettuce leaf on a salad plate.  (You may omit this step and put the salad in a dessert bowl.)

2. Place a pineapple ring on top of the lettuce.

3.  Place a scoop of cottage cheese in the middle to resemble an ice cream scoop.

4.  Top with a maraschino cherry and a spoonful of cherry juice.

*Because my kids are still little, I use kitchen scissors to cut the pineapple rings into bite size pieces, yet still position them in the original ring shape.

Pineapple Orange Fruit Salad

Darnell likes to serve this simple fruit salad with dinner.  She often puts it on the buffet table at our family Easter gathering and at birthday parties. It’s a good recipe for kids to help with since there is no chopping or cooking.

1 11oz can mandarin oranges drained
1 20oz can pineapple chunks drained
1 cup seedless grapes
2/3 cup vanilla yogurt (We like Stonyfield Farms best.)
2 Tbsp orange marmalade
1/4 tsp ground ginger

Stir together yogurt, marmalade and ginger.  Toss with fruit.

Cherry Tomato Cheese Balls

My four-year-old daughter loves tomatoes.  With my help, she can make this simple recipe.  She even gathers basil from the garden and tears it into small pieces.

Ingredients

1 pkg cherry tomatoes
1/2 cup whipped cream cheese
fresh basil, chopped or torn
salt and pepper to taste

Method

Slice the top off of each tomato and gently scoop out some of the seeds.  Turn upside down on a paper towel to drain for a few minutes.

Mix cream cheese with basil, salt, and pepper.  Fill tomatoes with cheese mixture and place the lids back on top.  They will not close completely.

*Thinly sliced chives or green onions may be substituted for basil.

Cucumber Salad Dressing

1/4 cup sour cream
1 Tbsp white wine vinegar
1/4 tsp salt
1/4 tsp pepper

Use this dressing to top thickly sliced cucumbers.

Poppy Seed Salad Dressing

The green and red colors make this salad a nice choice for Christmas.

1/2 cup sugar
1/3 cup cider vinegar
1 Tbsp poppy seeds
1 tsp salt
1 tsp dry mustard
1 cup salad oil

We like this dressing on a green salad with strawberries, toasted pecans, and goat cheese or Gorgonzola cheese.
